The podium
1. Dayne's Craft Barbecue — Aledo (100 S Front St, Thu–Sun from 7:30am). The corridor's destination pit, full stop: a Texas Monthly Top 50 joint sitting by the railroad tracks downtown. Craft-barbecue rules apply — à la carte by the pound, specials that rotate monthly, a full bar, and breakfast kolaches because they open at 7:30. The brisket and the sides (the hot corn and apple slaw have their own followings) justify the weekend lines. This is the one you take visitors to.
2. Mesquite Pit — Weatherford (1201 Fort Worth Hwy, closed Sundays). The institution: 2,400+ reviews deep, part barbecue joint, part steakhouse, all western-cabin Weatherford. The play is the sliced brisket or the mesquite-grilled steaks, and it's the room where the county celebrates things.
3. Heim Barbecue — Weatherford (1910 S Main, daily). Fort Worth's famous name, west edition: prime-grade beef, post-oak smoke, the bacon burnt ends that built the brand, in a bright modern room. The most polished operation on this list.
The specialists
The value sleeper: True Texas BBQ — Hudson Oaks (inside H-E-B, daily). Yes, the grocery store. The turkey and ribs earn genuine local devotion at half the craft-joint price; the catch is patio-only seating in the Texas sun. The trailer tier: H&M Barbecue (Granbury Hwy, Wed–Sat) and Tailgaters (FM 920, Wed–Sat till it sells out) are the small-batch operators — call-ahead territory, sells-out-by-2pm energy, and some of the best ribs in the county when you time it. The post-game tradition: Railhead Smokehouse — Willow Park (S Ranch House Rd): ice-in-the-frozen-mug beer, live local music, and the room half the corridor lands in after Friday lights. The city-trip tier, for when you're east anyway: Terry Black's on W 7th (the destination beef rib), Heim's original on White Settlement Rd, and Riscky's on Camp Bowie for old-Fort-Worth atmosphere.
